I have been very mixed up on how casting defensively worked in the past. I made some assumptions about things and learned they were wrong.

Blame the GM!...seriously, rules and how things are MEANT to work are all well and good, but how they actually DO wind up working is based upon the GM's decisions on how to interpret them.

It's not a roll to avoid attacks of opportunity exactly. It doesn't provoke if you declare that you are casting defensively. Per it's entry in the magic section of the CRB:

"Casting Defensively: If you want to cast a spell without provoking any attacks of opportunity, you must make a concentration check (DC 15 + double the level of the spell you're casting) to succeed. You lose the spell if you fail."

I also would almost never cast a cure spell to harm undead. Because it's roll concentration if it comes up, make a touch attack, and then they can save for half. Cures suck for hurting things and so do inflict.

I do say almost though because it is a way to hurt ghosts and shadows and at low enough levels it may be all you've got.
